Coquito is traditionally a Puerto Rican eggnog that is very rich and extremely satisfying. This eggnog recipe uses coconut milk which brings the taste of the islands to any holiday table. It is meant to be sipped slowly and deliberately. The white rum adds a nice kick. The brandy adds a smoothness that makes this eggnog incredibly flavorful. Toast the lovely island of Puerto Rico and have a very Merry Christmas!  

6 eggs

3/4 bottle white rum

2 cans coconut milk (or cream of coconut for a sweeter taste)

2 cans evaporated milk

2 cans sweetened condensed milk

2 tablespoons vanilla

1 cup brandy


1. In a blender, beat the eggs and rum at high speed.

2. Lower blender setting and add all additional ingredients.

3. Bottle and chill through.

Serve in small liqueur glasses.   I like a dash of nutmeg on top!

Makes 8 servings.
